Quadrados de abóbora sem glúten



As últimas semanas têm sido um autêntico desafio: fazer uma dieta sem glúten, lactose e o que fazer para comer tem sido uma aventura. Tivemos de reaprender algumas coisas, como cozinhar sem cebola e alho (achava eu que era algo inexequível, mas é possível!), e apesar dos doces terem saído um pouco sacrificados, conseguimos algumas coisas boas. Como estes quadrados de abóbora, mesmo a calhar para a época natalícia, com uma oferta do sr. Luís Martins, comerciante do Mercado da Graça, em Ponta Delgada. A receita tem muitos ingredientes mas basta misturar tudo :)

Ingredientes:
200 gr. de farinha de arroz
80 gr. de farinha de milho
60 gr. de fécula de batata
40 gr. de farinha de amêndoas
1 1/2 cc de bicabornato de sódio
1 1/2 cc de fermento em pó
3 cc de maizena, diluídas em 7 cc de água
250 gr. de mel
250 gr. de puré de abóbora
60 gr. de margarina vegetal
canela
sal
sumo de limão


Aquecer o forno a 180º.
Misturar todas as farinhas, a fécula de batata, o fermento, o bicabornato de sódio e o sal. À parte, misturar o mel com o puré de abóbora, a manteiga, seguido da maizena combinada com a água. Juntar as duas partes até ficar homogéneo, misturando depois a canela e e o sumo de limão.
Deitar numa forma retangular e levar ao forno. Espete um palito: estará cozido quando o palito sair limpo.

The last weeks have been an enormous challenge: doing an gluten-free, lactose-free and FODMAP diet, finding what to eat has been an adventure! We had to learn how to cook without onions and garlic - a thing I thought was impossible - and the truth is that we did some good things. Like this pumpkin rectangles, right on time for Christmas, with pumpkins offered by mr. Luís Martins, from Mercado da Graça, Ponta Delgada. It's a bit handful but it's worth for those who are on a kind of diet as such. There's plenty of ingredients but you just have to mix it up altogether :)

Ingredients:
200 gr. rice flour
80 gr. corn flour
60 gr. potato starch
40 gr. almond flour
1 1/2 of sodium bicarbonate
1 1/2 teaspoons of baking powder
3 teaspoons cornstarch, diluted in 7 teaspoons of water
250 gr. of honey
250 gr. of pumpkin puree
60 gr. of margarine
cinannom
salt
lemon juice

Pre-heat the oven at 180º.
Mix all the flours, the potato starch, the baking powder, the sodium bicarbonate and the salt. On another recipient, mix the honey with the pumpkin puree, the butter, and the cornstarch diluted in water. Mix the two parts and add the cinnamon and the lemon juice. Pour down on a rectangular shaped form and put on the oven.
